I have had a few requests via social media for my Garlic Herb Mini Pizza’s that I created last year. This recipe (WTF) happens to be low low low carb, and “Keto” friendly.
My guiltless solution to satisfy your pizza cravings (If carbohydrates are your nemeses)…
WHAT I USED
1 hand held mixer or Kitchen-Aid
4 eggs
6 oz. cream cheese (at room temperature)
1 ½ tsp. baking powder
½ tsp. salt
½ tsp. garlic powder
½ tsp. Italian herb blend
½ cup of low carb tomato sauce (or sliced tomatoes works great)
2 oz. Pepperoni for topping
Fresh basil for garnish
3 tbsp. Olive oil for drizzling
THIS IS HOW I MADE IT
Preheat your oven to 325 degrees
Separate the egg yolk and the egg whites.
Beat the egg whites until they make hard peaks and set aside.
Beat the egg yolks and cream cheese until well incorporated. Blend in the baking powder.
Fold the egg yolk mixture into the egg whites until well incorporated. This process should leave the mixture light and fluffy like a cloud.
Spoon your “Pizza Dough” mixture onto a baking pan in 5 inch round balls and bake for 18 minutes.
Take the dough out and let cool. Add pizza toppings of your choice and re-bake at 375-400 degrees until your cheese is well melted. Garnish with fresh herbs and enjoy!!
