One of my favorite foods is rice. Sounds boring right? “Wrong,” rice is a staple for most cultures in the world, it’s inexpensive, clean, simple and easy to digest. It also makes macro counting a cinch. I’ve used this “super” easy recipe for a few years now and even made it as a side dish when cooking on the set of Justice League last summer. It’s the perfect side to meat, fish, burgers, or my KEFTA MEATBALLS (which I’ll post next if you missed it on my old site!). My Lemon Rice is also quite tasty as a cold salad or of course, for meal prep so make extra.
Ingredients I Used
3 cups of cooked rice (I used white rice)
2 cloves of fresh garlic minced
3 tbs fresh basil, chopped fine
3 tbs fresh parsley, chopped fine
salt and pepper to taste
1 fresh avocado chopped in chunks
Juice from 2 medium lemons
1/4 cup of red onion chopped fine
1/2 cup of English Cucumbers Chopped fine
1/2 cup cherry tomatoes cut
2 tbs olive oil
1/2 tsp dill

This Is How I Made It
Cook your rice and cool
In a large bowl mix lemon juice, salt, pepper, olive oil, and dill
chop the other veggies and tomatoes and add them into the rice slowly. Turning the ingredients instead of mixing as to not breakdown the avocado.
Garnish with some parsley and serve. Tastes great warm or cold, just don’t heat the avocado.
