Habanero Hoisin Chicken Sandwich

Lunch probably wont be the same after this. I rarely order sandwiches but my Husband loves them. They seem pointless to me unless they end up actually having lots of protein or are fancy AF. This happens to be both. Hoisin habanero sesame pulled chicken with grilled red onions, marinated cucumbers and chèvre. “Make your lunch less whatever.”

Ingredients I Used

For The Chicken:

1 lb. chicken breast

¼ cup hoisin sauce

2 tbsp. sesame oil

1 tbsp. garlic powder

½ tsp. saltimg_6276

1/3 cup habanero BBQ sauce

2 tbsp. rice wine vinegar (or white balsamic)

½ cup of water

The Rest Of The Stuff:

4 oz of chèvre (goat cheese)

1/3 cup of rice wine vinegar (or white balsamic will work or apple cider vinegar)

½ tbsp. sugar of your choice

½ English cucumber

1 tsp. salt

1 medium red onion sliced and grilled or sautéed in butter

4 ciabatta rolls

This Is How I Made It

Add your chicken and all the “for chicken” ingredients from above, to your crockpot and cook until the chicken shreds easily.

Once the Chicken is done, sauté or grill the onion and set aside

Chop the cucumber and place them in a small bowl with the vinegar, sugar, salt and sesame oil and set aside

cut in half and grill the ciabatta buns in a pan

Shred the chicken and assemble your sandwich with chicken, chèvre, grilled onions and marinated cucumbers. Serve with Sweet potato fries or a salad.
