Have you had Kefta? Once upon a time our friend Sarvas came over and made a Kabob version of this dish with ground Bison from The Honest Bison, grilled peppers and Tahini. What the hell, it was so good we had to re-make it! This recipe is traditionally made with ground Lamb but I love The Honest Bison’s meat so the swicharoo was easy.
Enjoy MY version of Kefta Meatballs over a bed of rice, green salad, grilled veggies or right out of the pan!
Ingredients I Used
24 oz of Ground Lamb
½ cup of chopped parsley (fresh)
2 cloves of garlic chopped (fresh)
1 grated and drained white or yellow onion
½ tsp salt
1 tsp cumin
2 tsp all spice
2 tsp cinnamon
¼ tsp cayenne pepper (or a little more, some like it hot)
Lemon Yogurt Sauce
3 tbs Lemon juice (fresh)
1 cup of full fat Greek Yogurt (I used Fage
3 cloves of fresh Garlic chopped
1 tbsp Dill (dried)
¼ cup chopped fine, Red Onion
¼ cup Chopped Fine, English Cucumber
Salt & Ground Pepper to taste

This Is How I Made It
The Lemon Yogurt is super easy, simply chop all of the ingredients fine and mix them together. Letting the sauce sit while you cook the meatballs will bring more flavor out.
For the Meatballs; grate the onion with a cheese grater and strain the water out. I know this sounds like a sucky thing to do but it’s worth it.
In a large bowl mix the spices, chopped parsley, ground Lamb and the onion. Mix until all of the ingredients are well combined. Give your dinner a little love and use your hands.
Roll the meat into little balls about 2 tbs in size or 1 oz.
Heat a sauce pan up on medium high (non stick so you don’t ruin every ones day)
Pace the meatballs into the pan, leave room between them for cooking and turning. You may have to make 2 batches. Turn the meatballs as they cook so they cook evenly
I like to cook my meatballs medium like a hamburger. Lamb is safe to eat medium. They will also continue to cook once you take them off the heat.
Serve with grilled veggies, salad, my delicious Lemon Rice and of course, your lemon yogurt sauce. Enjoy!!
