The Sexy Quiche

Egg dishes are always sexy.  I know exactly what’s in an egg and the amount of calories, fat and protein.  These delicious little breakfast quickies, look fancy for weekend brunch and are super easy and reheat well for meal prep.  Enjoy any and every day of the week.

INGREDIENTS I USED

4 eggs + 3 egg whites

1/4 cup red onions

1 + tbs chopped basil, fresh

1/2 cup milk (I used whole milk)

1 large potato

Salt and Pepper

1/2 tbs rosemary

cotija cheese for garnish

butter or cooking spray to grease the muffin tins

1 avocado

FOR THOSE TRACKING THEIR DIET

Makes 4 servings (I used the large size muffin tins)

THIS IS HOW I DID IT

Preheat the oven to 320

Dice the red onion very thin in a pan with a little bit of butter.

Grate or slice the potatoes very thin and sate in the pan with the onions. Add salt and pepper

In a bowl add eggs, egg whites and milk and beat with a fork or a whisk.  Add the basil, salt, pepper and rosemary

-grease your large muffin tin and add the onion potato mix evenly to the bottom.  Pour the egg mixture over the potatoes and place in the oven for 15-20 minutes.  An easy way to see if its done is to stick a toothpick into the center and see if it comes out clean.  If

so, its done!

Once they are done, take a butter knife and run it along the edge of the quiche and carefully pull it out of the muffin tin.

Top with sliced avocado and cotija cheese crumbles and serve!
