Breakfast Skillet Skillz

Breakfast food is so damn good we find ourselves it for lunch and dinner too. If you eat dinner for breakfast you’re just being a lazy ass. I get a lot of breakfast requests and I don’t ever post Breakfast recipes, sorry guys.. Most of my breakfasts are fast and easy (like my man) and I get cooking and forget to take pictures so I don’t always post what Im making. Last Sunday I wanted to make an easy egg skillet and it turned out beautifully so here it is BREAKFAST LOVERS.


Breakfast Skillet ShutupEAT


– 4 Eggs

– Some Red Onion

– about 2oz of Canadian Bacon, Ham or thick cut Bacon

– a pinch of tarragon (optional but wtf, level up people)

– 1 Oz Cheese (I used super sharp local cheddar from Beehive Cheese Co.)

– 1/3 cup of Shredded Potatoes (you can use Sweet Potatoes if you are #Paleo as fuck)

– 1/2 tbs Butter

– 1/4 cup of fresh Tomato

– A pinch of salt and pepper

– Parsley for garnish

Preheat oven to 325

Butter a small/medium oven safe skillet (I used a coated cast skillet) and set aside

Shred potatoes or cut super thin (I used a Mandolin). Fry the potatoes in a small pan stovetop with a little butter until crispy. Add salt and pepper and a little garlic powder if you want.

Fry up your breakfast meat of choice. If you are using bacon, only cook until the bacon is done. Don’t overcook because it will continue to cook in the oven



In a medium bowl whip your eggs with a pinch of tarragon, some chopped parsley, salt and pepper and set aside

Layer the bottom of the oven safe skillet with onions, I like to keep the onions in half circles or rings. Next layer your crispy potatoes, pour on the eggs, add the breakfast meat on top with a few more onion rings. Top with cheese and stick that baby in the oven for 20 minutes or until the middle stops shaking when you wiggle it (I promise that wasn’t a micro aggression)

Once the eggs are done, take the skillet out of the oven. Serve with sliced tomatoes and garnish with parsley.
